Simple and Amazing Vegan Peasant Bread Recipe

Baking bread is easier than you think and this vegan peasant bread is super simple. The only thing you need is time, which is easy to come by right now. This bread will wow your family because it is so dang delicious!

 

Vegan peasant bread might be the easiest and most adaptable bread recipe I’ve created and you only need a few simple ingredients, which is always great. The one thing you absolutely need is yeast, which can definitely be hard to find right now. But this recipe only needs a 1/2 teaspoon of yeast. That is not a lot compared to most other recipes. I adapted mine from Food Network’s No-Kneed Peasant Bread to be vegan and include some flare.

My first big recommendation for this bread is to add your own personal flare to it. I’ve baked it twice and made two very different breads. Both options are found below. The first time I added simple spices, which were amazing. I added garlic, dill, and thyme to the dough, as well as thyme, sea salt, and olive oil to the top. This variation was fluffy and delicious.

My second variation includes a personal favorite, olives. Just to warn you, adding olives makes the bread rise less and become a true olive loaf. That’s because adding olives, kalamata olives especially, also adds a lot of the olive juice to the bread. That is totally okay and honestly, it was nice to make a completely different bread with only one new ingredient.

I have yeast left over and will definitely be making this bread again! Both styles are refreshing and perfect for dipping in soup, toasted with butter, as a side with dinner, or sliced large for sandwiches. If you’re not going to eat this bread right away, then definitely cut it up and freeze it. It freezes beautifully, but you’ll likely want to eat the bread right away. Amazing Vegan Peasant Bread

 

Recipe Details:

  • Prep Time: 5 minutes
  • Cook Time: 30 minutes
  • Inactive Time: 21 hours
  • Total Time: 21hrs 35 minutes
  • Yields: 8 -10 servings

 

Olive Bread Baked and Sliced

 

Ingredients:

  • 3 cups flour
  • 1/2 teaspoon active dry yeast
  • 1 1/2 teaspoons salt
  • 1 1/2 cups warm water
  • All purpose flour, for dusting

Optional Ingredients:

For the Top:

  • 1/2 teaspoon sea salt
  • 1/2 teaspoon thyme
  • 3 sprays of olive oil from spray bottle (or drizzle with spoon)

Bread 1 (add to dough):

  • 1 tablespoon dill
  • 1 tablespoon thyme

Bread 2 (add to dough):

  • 1 tablespoon thyme
  • 1/2 cup chopped kalamata olives
  • 3 sprays of olive oil from spray bottle (or drizzle with spoon)

 

Vegan Peasant Bread 1, Pre-Baking and Post Rising

 

Directions:

  1. Combine the flour, salt, optional spices, and yeast in a large bowl. Add 1 1/2 cups of lukewarm water and mix with a spoon until it forms into a dough. If making Bread 2, add the olives now and mix thoroughly.
  2. Let your dough rise in the bowl, covered with both plastic wrap and a cotton towel at room temperature, for 18 hours. The surface will be bubbly after rising.
  3. Generously dust a workspace with flour. Work the dough for a few moments with flour, kneading it 4 to 5 times. Do not work it too much.
  4. Form the dough into a ball and place it into an oven-safe dish.
  5. Cover with only a cotton towel and let it rise again for 3 hours.
  6. Preheat you oven to 450 degrees Fahrenheit at least 30 minutes prior to baking.
  7. Bake for 30 minutes until bread is brown and crusty.
  8. Let cool on a wire rack for 15 to 20 minutes before slicing.
