Red Quinoa Chickpea Salad with Tomato and Avocado

Delicious, healthy and crunchy salads are my favorite. This red quinoa chickpea salad with tomato and avocado is the perfect combination of all three!

I like to make these salads extra crunchy to satisfy my personal craving and crunchy salads keep me away from nachos and chips! I use red quinoa which is both super healthy and tastes wonderful, plus the chickpeas, another favorite of mine!

To serve I plate the salad over greens, surrounding it with tomato and avocado.  So good and so easy. You can also add extra toppings to this salad to make it more filling, such as canned tuna, grilled ahi tuna or shrimp. Just use your imagination!
