During the busy holiday season when time is short, I turn to quick and easy one skillet meals that taste delicious and are easy to prepare. My Mediterranean shrimp recipe with tomatoes and capers is warm and hearty, perfect for the winter months.
I find shrimp to be versatile, and ideal for one skillet meals. There’s an ease of preparation with shrimp, and its easy to find great pairings. I love to give my shrimp a Mediterranean flare with tomatoes, capers and wine for a delicious and easy dinner.
Mediterranean Shrimp with Tomatoes and Capers
Ingredients:
4 tablespoons butter
4 cloves garlic, minced
1 shallot, chopped
1 tablespoon Italian seasoning (I use Penzys Tuscan Sunset)
1 cup chopped cherry tomatoes
1/4 cup sliced olives
2 tablespoons capers, chopped
1/4 cup fresh lemon juice
1/2 lb. shrimp, cleaned and deveined

Directions:
In a skillet heat butter over medium heat. Then add garlic and shallots, cooking for five minutes. Don’t brown your garlic. It will become bitter if browned.
Add Italian seasoning and tomatoes, cooking for another five minutes.
Stir in olives, capers, lemon juice and shrimp. Continue cooking for five minutes until shrimp is cooked, stirring to blend all the flavors.
