Grilled Mediterranean Shrimp Dinner Recipe
I love easy dinners and great taste is a must. That’s why grilling is so great. It makes meals quick, easy and delicious, like my Mediterranean Shrimp recipe.
Marinate your shrimp ahead of time to infuse the Mediterranean flavors into your seafood. It always transports me back to my own visits along the Mediterranean sea. The secret to tasty meals like this one is using fresh produce and herbs. It’s an easy touch, yet so important to creating natural flavors and textures in a meal.
Grilled Mediterranean Shrimp
Ingredients:
2 pounds large shrimp, peeled and cleaned
1 cup cherry tomatoes, halved
Juice of one lemon
2 tablespoons olive oil
2 cloves garlic, minced
1 tablespoon fresh basil, thinly chopped
1 teaspoon sea salt
1/2 teaspoon fresh ground pepper
1 tablespoon capers

Directions:
1. Place shrimp and tomatoes in a medium bowl.
2. In a small bowl combine remaining ingredients. Pour over shrimp and tomatoes. Refrigerate for eight hours or over night.
3. Heat grill to high. Drain shrimp and tomatoes, reserving the marinade.
4. Place shrimp and tomatoes in a pan designed to use on an outdoor grill. Grill for 8 to 10 minutes, or until shrimp is no longer translucent. While grilling, continue to brush shrimp with reserved marinade. Serve hot.
