I have to admit, I so enjoy entertaining friends and family with a spectacular assortment of appetizers. My golden baked brie recipe, wrapped in puff pastry with figs, is a true crowd pleaser.
I aim for a variety of textures and tastes when selecting appetizers; foods that appeal to many different pallets. One of my guests favorite appetizers is my combination of brie, figs, pecans, and candied cranberries, wrapped in flaky puff pastry.
I can smell the baked puff pastry, golden brown to perfection with warm brie bubbling out as you cut through to reveal the figs inside. Delicious!
Golden Baked Brie with Figs in Puff Pastry
1/2 package of frozen puff pastry (one sheet)
1 teaspoon water
1/2 cup fig spread
1/3 cup dried cranberries, softened (microwave with 1 teaspoon water on low for 30 sec)
1/4 cup toasted pecans, chopped
1 brie round (8 oz)
Thaw the pastry sheet at room temperature for 20 minutes. Preheat oven to 400 degrees F.
Mix egg and water in a bowl. Unfold pastry sheet on lightly floured surface and roll into a 12″ square.
Cut pastry to make a 10 inch circle. Spread fig spread to within 1 inch of pastry edge. Sprinkle cranberries and pecans. Place cheese round on top. Brush edges with egg mixture.
Fold two opposite sides over the cheese. Trim remaining two sides to 2″ from edge of cheese. Fold these two sides onto the brie. Press edges to seal.
Place seam side down on baking sheet. Decorate top with rolled out remaining pastry. I recommend a mini leaf cookie-cutter for a fall them.
Brush with egg mixture. Bake 20 minutes or until golden brown. Let stand 1 hour. Serve with crackers.
