This salad is wonderful to make ahead of time, allowing the flavors to marinate together. It’s also a portable dish for any pot luck or picnic. Is this the perfect summer salad? You’ll just have to decide for yourself!
Mediterranean Quinoa Salad with Feta and Olives
1 cup quinoa, cooked according to package instructions
Juice of 1 lemon
2 teaspoons lemon zest
1/2 cup olive oil
1 tablespoon fresh thyme, finely minced
1/2 teaspoon sea salt
1/4 teaspoon fresh ground pepper
1 cup chopped Cherry tomatoes
1/2 cup chopped Kalamata olives
1 tablespoon capers, minced
1/2 cup crumbled feta cheese
1. Combine lemon juice, lemon zest, olive oil, thyme, salt and pepper in a bowl.
2. Pour mixture over cooked quinoa, gently tossing.
3. Add remaining ingredients, combining thoroughly. Chill overnight to marinate the flavors.
