Spaghetti Squash – My go to Fall Food!

The fall is a great time for food! Who doesn’t love the changing weather, the pumpkins, gourds, and squash? Fall makes for some amazing meals, and a few years ago I discovered the magic of spaghetti squash! It’s now my go to fall food!

Spaghetti Squash is super easy to make, and it’s everywhere this time of year. It’s an amazing vegetable. The outside is unassuming, and I never thought that the inside of the squash would actually look like Spaghetti, but it does! If you’re lucky enough to live by a Trader Joe’s, then go grab this vegetable, because this year they’re packed with spaghetti squash. They even have little directions on the sticker for how to cook it. But I’ll give you a secret, don’t microwave the squash like Trader Joe’s suggests! I tried it once and it needed way longer than it said, and it felt unnatural to microwave. Ultimately the squash was not as good.

The easiest way to cook this bad boy is to cut it open, clean out the seeds, spray a little olive oil on it, season it however you please, and pop it in the oven. I like to use a little fresh black pepper and chili powder. Then place it in a pre-heated oven, anywhere from 375 to 400 degrees F depending on your oven. I do mine at 400 because my oven is not hot enough. Bake your squash on a cookie sheet, or in a casserole pan, facing up and check it after 45 minutes. Once it’s done, let it cool and scoop out the squash. Top it with tomato sauce and you’re good to go! That is the simplest way to make some delicious spaghetti squash.

I also like to get more creative with my squash. Spaghetti squash can essentially be subbed for any pasta, so insert recipe here. I love to make my own baked spaghetti squash casserole. You can do it with a red sauce or a cream sauce. I prefer a red sauce with the addition of mushrooms. I’m also a fan of cheese, so I always add either Parmesan or mozzarella on top. This dish is delicious, and honestly very easy to make. Bake the squash in advance, scoop out the ‘spaghetti,’ and then put together the casserole when you’re ready. Your prep time is now only 10 minutes. Super simple kids!

You can even get a bit fancier with your squash. If you love pesto, it goes great with spaghetti squash. Do you have an awesome baked macaroni recipe? Use Spaghetti squash instead. That’s the best thing about this vegetable, you can sub it for a wide variety of pastas. Sure, we all love a good pasta, but have you ever looked at a true serving of pasta? It’s super small kids! Using spaghetti squash is just as satisfying, and you can split a whole pan full of deliciousness with one other person and have absolutely no guilt at all!

Spaghetti Squash is wonderful. You can use it as a side, or use it as the main course. You’ll inspire and turn people on to this perfect fall food! There are so many uses for it! I can’t wait to enjoy some spaghetti squash again this fall!
