Granola Bar Recipe with No Added Sugar!

On my No Added Sugar 30 Day Challenge I knew that I would miss granola bars, so I created my own Granola Bar recipe with no added sugar.

I always used to keep my pantry stocked with Nature’s Valley granola bars and carry one in my bag. No more. I gave them up because, lets face it, most granola bars have a lot of added sugar. It was a struggle to find ones that don’t have any, a few do not, but ultimately I went homemade.

Most homemade protein / granola bar recipes have honey or agave added to them, but mine does not. I stuck with ONLY sugars from fruit to sweeten my granola bars. They turned out delicious!

Homemade Granola Bars (No Added Sugar)

3/4 cup rolled oats

3/4 cup dates

1/4 cup raw pumpkin seeds

1/4 cup raw cashews

1/4 cup organic, unsalted, chunky peanut butter

1 tablespoon raw, shredded, coconut

1/2 teaspoon cinnamon

1/2 cup water

Pre-heat oven to 325 degrees F.

Grind the oats in a food processor or blender. Put them in a bowl and set aside.

Take the dates and blend them together with water. Make sure it looks like a paste. Start with 1/2 cup of water, and if it’s not smooth enough, add a little more water. Scoop the date paste into a large mixing bowl.

Combine all your remaining ingredients into the bowl with your date paste and mix it up well.

Take a greased baking sheet, or use parchment paper, and spread the mixture out onto the sheet. It will be sticky, so use your hands to spread it out evenly. You can wet your hands and that should help with sticking.

Bake in the oven for 15 minutes. Take out and let cool, then transfer the whole bar onto a cutting board to cut into mini bars!
