Goat Cheese Egg Salad recipe with Red Beets

 

I was craving egg salad recently, but not the ordinary variety. So I took my egg salad recipe and mixed in some of my favorite ingredients, including goat cheese and red beets.

The final recipe turned out delicious and creamy, if I do say so myself. Egg salad becomes dynamic and memorable all over again. Presentation is important, even if you’re eating alone, so make it look good. I made a colorful salad, placing a small amount of egg salad in the center and drizzling balsamic vinegar on top. The final dish is both beautiful and wonderfully tasty.

I will caution, this egg salad recipe is very rich. Just eat a small portion and add a salad of fresh vegetables for a wonderfully healthy meal. You can eat well and stay thin if you use portion control of rich foods. I recommend balancing your meals with more greens and fresh vegetables, less high caloric foods.

Exercise is also essential for staying fit and healthy. Find a physical activity that you enjoy and incorporate it into the fabric of your day. Then you’ll always want to make time for exercise and can enjoy treats like egg salad!

 
 

Goat Cheese Egg Salad with Red Beets

 

Ingredients:

4 eggs, hard-boiled, peeled, and chopped

1/4 cup reduced fat mayonnaise with olive oil

1/4 cup goat cheese, crumbled

1 tablespoon scallions, minced (just the white part)

1/4 cup celery, finely chopped

1/4 cup red beets, chopped

1/4 teaspoon black pepper

Directions:

In a medium bowl mix eggs and mayonnaise.

Add goat cheese,  mixing until combined.

Add remaining ingredients.  Makes 4 small servings.
