Unique Christmas Cookies with Chocolate and Cinnamon Swirl

Holiday treats are as special as the people who make them, so flash your flare with these two unique Christmas cookies! A deliciously festive cinnamon swirl shortbread cookie and an equally wonderful chocolate dipped butter cookie. Both of these cookies are vegan and sure to impress your family!

 

How does a cinnamon bun in a cookie sound? What about a chocolate dipped delight? These two unique Christmas cookies are a special twist on classic desserts, plus they’re vegan. My first is like a cinnamon bun, but wrapped in a Christmas cookie! My cinnamon swirl shortbread cookies are a festive vegan delight, sure to impress unless you eat them all yourself. They’re that good. My second cookie recipe, a Christmas butter cookie, is a holiday tradition in my house, so this year I took it up a notch with my cookie press and a chocolate dipped finish. These cookies are spectacular!

Recipe Details for Cinnamon Swirl Cookies:

  • Prep Time: 40 minutes
  • Resting Time: 1 hour (overnight)
  • Cook Time: 14 minutes
  • Total Time: 54 minutes
  • Yields: 24 servings

Cookie Ingredients:

  • 1 2/3 cup all purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/2 cup room temperature vegan butter
  • 1/2 cup organic sugar
  • 1 flax egg (1 tablespoon flax seed and 3 tablespoons water)
  • 2 teaspoons vanilla extract
  • 5-6 drops red food coloring

Filling Ingredients:

  • 6 tablespoons brown sugar
  • 1 teaspoon cinnamon

Vanilla Glaze Ingredients:

  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar
  • One tablespoon almond milk

Cookie Preparation:

  1. Make your flax egg and set it aside.
  2. Mix together your flour, salt, and baking powder in a large mixing bowl and set aside.
  3. In a separate mixing bowl, add your butter and sugar. Cream with a stand or hand mixer, about 2-5 minutes. Once creamed, add in your flax egg, vanilla extract, and food coloring. Mix until combined. This is your dough.
  4. Put your dough in the freezer for one hour, or in the fridge overnight.
  5. Prepare your filling: Mix the sugar and cinnamon together, then set aside until dough is ready.
  6. After one hour, roll out your dough into a 1/2 inch thick rectangle. Spread the cinnamon sugar filling all over the dough. Then roll the dough up into a log.
  7. Spray two cookie sheets with cooking spray and preheat your oven to 350 degrees Fahrenheit.
  8. Cut your dough into one inch thick slices, your cookies.
  9. Place cookies back in the freezer for 10-20 minutes.
  10. Bake your cookies for 10-20 minutes. I found 14 minutes to be perfect.
  11. Cool for 20 minutes before you glaze them.

Glaze Preparation:

  1. Combine the powdered sugar, vanilla extract, and almond milk together in a small bowl.
  2. Once cookies are cooled, drizzle them with glaze.

Recipe Details for Chocolate Dipped Butter Cookies:

  • Prep Time: 25 minutes
  • Cook Time: 15 minutes
  • Total Time: 40 minutes
  • Yields: 24 servings

Ingredients:

  • 1 cup vegan butter
  • 1/2 cup organic sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 3 tablespoons Aquafaba
  • 2 1/2 cups all purpose flour
  • 1 cup chocolate chips
  • Sprinkles (optional)

Preparation:

  1. Preheat your oven to 350 degrees Fahrenheit and spray two cookie sheets with cooking spray.
  2. In a large bowl or stand mixer, cream together vegan butter and sugar until light and fluffy.
  3. Add vanilla, salt, and Aquafaba to the creamed butter mixture and beat for 5 minutes.
  4. Mixing by hand, mix in the flour. Mix until the dough is blended, but avoid over mixing.
  5. Add your dough to a cookie press or pastry bag.
  6. Press the cookies onto your cookie sheets, leaving a little space for each cookie to expand.
  7. Bake for 10-13 minutes.
  8. Once your cookies are fully cooled, melt the chocolate chips in the microwave and dip each cookie into the melted chocolate. Then add sprinkles. Repeat until all cookies are decorated.
  9. Store in an air-tight container once chocolate is dry. They are freezer friendly.
