Perfect Peach Crumble Topped with Vanilla Ice Cream

Beautiful ripe peaches are everywhere as the summer comes to a close, meaning its time to bake them into a splendid dessert! My perfect peach crumble recipe gets a little creative with the topping, but stays traditional with vanilla ice cream. Enjoy!

 

August is peach month, with beautiful ripe peaches coming to market in New England and across the country. The fruit has always been a favorite of my family, from sliced peaches topped with yogurt and granola, to elaborate peach pies, tarts, cakes, cobblers and peach crumble. The list of amazing peach desserts seems endless, but this recipe was always their first choice.

There are so many great choices of how to bake your delicious summer fruit to delight your family and friends. This particular recipe is a crumble, which differs significantly from a cobbler. The traditional cobbler has a biscuit topping, while the peach crumble has a topping of loose ingredients which are combined and placed on top of the fruit. Both are delicious, but the crumble offers more room for creativity. No matter which you choose, don’t forget to serve with rich vanilla ice cream!

Perfect Peach Crumble

 

Peach Filling Ingredients:

  • 1/4 cup brown sugar
  • 1/4 cup white sugar
  • 1/2 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 8 cups peaches, thinly sliced
  • 1 teaspoon cornstarch, dissolved in 1 tablespoon water
  • 1 lemon, juiced

Crumb Topping Ingredients:

  • 3/4 cup brown sugar
  • 1/4 cup sugar
  • 3/4 cup all-purpose flour
  • 3/4 cup oats
  • 1/4 cup slivered almonds
  • 1/2 cup dried cranberries
  • 1/2 teaspoon freshly grated nutmeg
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 egg, slightly beaten
  • 1 stick unsalted butter, melted
  • Vanilla ice cream* or whipped cream, for serving

Directions:

  1. Preheat your oven to 450 degrees Fahrenheit.
  2. To make the peach filling:
    1. In a large bowl, stir together sugars, flour, cinnamon and salt.
    2. Add peaches and gently toss to coat.
    3. Mix together cornstarch slurry and lemon juice.
    4. Stir into peaches mixture to incorporate.
    5. Butter a 12 by 8 inch oval dish and add peach mixture.
  3. To make the crumb topping:
    1. In a medium bowl, combine all dry ingredients.
    2. Top peaches with crumb topping mixture.
    3. Poor melted butter over crumb topping.
  4. Place in your oven and bake uncovered for 35 – 40 minutes.
  5. Remove from your oven and let sit for 15 minutes before serving.
  6. Serve with vanilla ice cream.
