Grilled Moroccan Swordfish Kebabs a True Delight

 

Perfectly marinated swordfish makes for an incredible grilled kebab. The Moroccan flavors add a zesty flare to this light and fresh meal. Fire up the grill for some healthy Swordfish Kebabs!

Before the seasons change and the weather cools down, make sure you get some last meals in on the grill. Nothing says the end of summer quite like grilled fish, especially swordfish. Serve with a mixed green salad and fresh bread for a healthy and filling meal for the whole family.

 

Grilled Moroccan Swordfish Kebabs

 

Ingredients:

3 tablespoons extra-virgin olive oil
1 tablespoon fresh lemon juice
2 garlic cloves, minced
2 teaspoons ground cumin
1 teaspoon turmeric
1 tablespoon minced thyme
1/2 teaspoon crushed red pepper
2 pounds of swordfish steak, sliced 1 1/2 inches thick, cut into 1 1/2 inch cubes

Directions:

1. In a large, shallow dish, combine the olive oil, lemon juice, garlic, cumin, turmeric, thyme and crushed red pepper. Add the swordfish and stir to coat with the marinade. Refrigerate for one hour.

2. Light your grill and let it heat up.

3. Thread the marinated swordfish onto 6-inch skewers. Season with salt.

4. Grill the kebabs over a hot fire, turning once, until lightly charred and cooked through, about eight minutes.
