Perfecting Cauliflower ‘Mac N Cheese’

 

I often crave foods that aren’t the best for me. I want to taste the flavors, but I don’t want to eat the food itself! Luckily there’s always a delicious healthy alternative, a recipe that feeds my craving for a dish like ‘Mac N Cheese.’ I crave that one a lot. I just want some of that good old cheesy goodness. But I can’t indulge in the real thing very often. Let’s face it, macaroni and cheese is just carbs and fat.  So what’s a girl to do? Find an amazing substitute of course! I’ve perfected the best cauliflower ‘Mac N Cheese’ for healthy consumption.

Cauliflower ‘Mac N Cheese;’ it’s a carb free ‘Mac N Cheese’ that tastes amazing. Trust me, just because it’s got no macaroni in it does not mean it won’t satisfy those cravings. It most certainly does! And considering how healthy it is, you might never go back to the original. I make this dish a few different ways, but have perfected the recipe into what follows.

First you prepare the cauliflower. Chop up a full head and transfer it into a baking pan. Spray with I can’t believe it’s not Butter and add garlic, Franks Red Hot, and pepper to the cauliflower. You can of course boil the chopped up head first and transfer it to a baking pan once tender, but I’ve found that boiling prevents the flavors from coating the cauliflower as well, and that it gets plenty tender in the baking process.

Next you make the yummy, but healthy, cheese sauce.  Don’t forget to preheat your oven first (400 degrees). In a small bowl, mix together a half-cup of Fage Greek yogurt and a wedge of Laughing Cow Cheese.  Add just a little more Franks Red Hot, but if you aren’t into spicy then skip the hot sauce.  Next add the yogurt mixture to the cauliflower and mix it all around.  Top the cauliflower with a little more cheese, such as 2 oz of chopped low fat cheddar (preferably not a lot more cheese to avoid unnecessary calories).  Bake the bad boy for forty minutes at 400 degrees, or if your oven runs hot, do it at 375.

This is by far my favorite way to make cauliflower ‘Mac N Cheese.’  I’ve made this dish many different ways, but this one is perfect. It has a wonderful creaminess to it because of the Greek yogurt and it wasn’t too heavy at all. Half the pan is only 300 calories! Yep. That’s all!  I made a little spinach salad to go on the side, split it with my man, and loved every cheesy bite.

Cauliflower ‘Mac N Cheese’ totally satisfies my carb craving! This perfected recipe tastes great, is healthy, and fills the macaroni and cheese void in my life. I even find myself craving this veggie version over the original. You can add other veggies too the dish as well, like broccoli, onions, or whatever fits your fancy. Trust me! Even your harshest critics will love this dish and its creamy, cheesy goodness. Yum.
