Since purchasing my Air fryer, I’ve tried many different recipes including chicken and veggies, all with excellent results. After going out to dinner one night with my family, I was inspired to make these Buffalo Cauliflower bites. We ordered roasted cauliflower for an appetizer and it was delicious. I realized that cauliflower would be great in my Air fryer, made Buffalo style. After some quick preparation, I had this tremendous recipe!

Buffalo Cauliflower Bites

Ingredients:

  • 1 head of cauliflower, broken into bite size pieces
  • ¾ cup almond flour
  • ¼ cup plus 2 tablespoons tapioca flour
  • 1 teaspoon chili powder
  • ½ teaspoon paprika
  • ½ teaspoon cayenne pepper
  • Salt, to taste
  • 2 eggs
  • Oil, to lightly coat
  • Buffalo sauce (see below)
  • Carrot sticks, celery sticks, and Blue cheese dip (for serving)

Buffalo Sauce Ingredients:

  • ½ cup plus 2 tablespoons hot sauce
  • 2 tablespoons ghee (or butter)
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • ½ teaspoon paprika
  • ¼ teaspoon cayenne pepper
  • Salt, to taste

Directions:

  1. In a small bowl, mix together almond flour, tapioca flour, chili powder, paprika, cayenne pepper, and salt.
  2. In another small bowl, whisk together the eggs. Set up an assembly line with cauliflower, eggs, and flour mixture.
  3. Bread the cauliflower by dipping it in the egg mixture, fully coating each piece. Then roll each piece in the flour mixture, fully coating. Place on a plate and repeat with remaining cauliflower pieces.
  4. Place breaded cauliflower in your Air fryer basket, evenly spreading them out and leaving room in between each piece so the air can flow through them. Spray cauliflower with a light coat of olive oil or avocado oil.
  5. Close drawer and set Air fryer on manual at 375°F for 15 minutes, pausing halfway through to stir them up. Make sure they are still spread out after you stir them around. You will probably have to cook your cauliflower bites in two or more batches to ensure they are not overcrowded, depending on the size of your Air fryer.
  6. While the cauliflower is air frying, make your buffalo sauce. Add hot sauce, ghee (or butter), lemon juice, garlic powder, paprika, cayenne pepper, and salt to a small saucepan and cook over medium-low heat. Cook until warmed through and combined, about 3 minutes.
  7. Once cauliflower is done, add all your pieces to a large bowl and pour buffalo sauce over top. Carefully mix to fully coat your buffalo cauliflower bites.
  8. Serve with carrot sticks, celery sticks, and blue cheese dip, or eat as is.

**For conventional ovens: Heat to 450 degrees Fahrenheit and cook for 20 minutes, until cauliflower is golden and tender. Then complete step 7 above.

Enjoy!
