Banana Muffin Recipe – No Added Sugar!

 

I was determined to create a delicious banana muffin recipe while on my No Added Sugar 30 Day Challenge. Success! One thing I learned on this challenge is that fruit is a great way to sweeten breads and cookies.

I found this GREAT Banana Bread recipe, removed all sugar, and turned it into muffins!

If you’re off the sugar like me, it has just the right amount of sweetness. Regardless, these muffins are just as delicious a treat as their sugar sweetened buddies!

 
 

Banana Muffins

 

Ingredients:

3 ripened bananas, mashed

1/3 cup vegetable oil

2 eggs

1 teaspoon vanilla extract

1/2 cup water

2 cups whole wheat flour

1/2 teaspoon cinnamon

1/2 teaspoon pumpkin pie spice

1/2 teaspoon coconut

Directions:

Preheat Oven to 325 degrees F.

With a hand mixer beat together banana, oil, eggs, vanilla, and water until creamy.

In a separate bowl, sift flour, baking soda, baking powder, and spices. Gradually add dry mixture to wet ingredients, beating well.

Pour the batter into a greased mini muffin pan. Only fill 3/4 of the way up. Sprinkle Coconut on top of the muffins. If you have left over batter, I recommend making six large muffins as well.

You can also play with the recipe. Add pecans to the batter, or dates. The next time I make these, I plan on adding a peanut butter surprise to the middle.
