Simple and AMAZING Cauliflower Soup Recipe!

I love soups! They are one of my favorite meals and I especially love a “creamy” soup without having to add any cream. Recently I made a simple and amazing cauliflower soup! It’s the best!

 
 

Even though it’s not necessarily soup weather here in Los Angeles, that did not stop me from making this delicious cauliflower soup. It’s so easy and creamy, without all the cream! There are only seven ingredients in this soup and one of them is optional.

Creamy Cauliflower Soup

Ingredients:
Head of cauliflower, cut into florets
6 cups of vegetable broth
1 tablespoon of olive oil
4-8 button mushrooms, diced
2 garlic cloves, minced
1 tablespoon of pepper
1-2 tablespoons of hot sauce (optional)

That’s all you need! Other than a head of cauliflower, I always have these ingredients in my pantry already, which makes this soup especially simple to prepare. It doesn’t have a lot of ingredients and it definitely doesn’t need them!

 

Preparation:
1. First chop up your cauliflower and mushrooms, setting your cauliflower aside.

2. In a large pot combine your garlic and olive oil. After two minutes, add your diced mushrooms and cook them until the garlic is brown. Once brown, add in your broth and cauliflower.

3. Add the pepper and hot sauce, then bring to a boil. Once boiling, lower heat and cover, letting simmer for 10-15 minutes.

4. Finally, use either an immersion blender or a regular blender and puree the soup.

This is a great soup to make ahead of time and have for lunch or dinner. The next time I want to make this I’m going to double the recipe, since my husband and I ate most of the soup in one sitting. Yes it is that good!

I love how this soup is low in calories, but doesn’t skimp on the flavor. It is perfect to make throughout the fall and winter months. The best part is the natural creaminess of the cauliflower. You don’t have to add milk, cream, or cheese to it at all. The natural texture and taste of cauliflower is full of flavors!

Since this soup is extremely light, I love making a side of avocado toast with it. You can totally dip the toast into the soup and it is delicious! I’ve also made a side of baked sweet potato fries with this as well. There are so many side dishes that go great with this soup!

Puree soups are perfect for the fall and winter! The best thing about this one is that you can really adapt it anyway you like. You can add curry powder and make it more of a curried cauliflower soup. You can add more garlic and make it an extreme garlic soup. You can add broccoli and make it a mix of broccoli and cauliflower soup. Whatever your fancy, it will work with this soup!

I love this cauliflower soup! It’s simple, flavorful and amazing! I love simple meals like this for lunch, dinner and for leftovers! Make sure you make more, because you may eat it all in one sitting and then you’ll be sad you don’t have leftovers.
