I was thinking of ways to spice up Tuna Salad, and decided to make a spicy Mexican tuna salad recipe. To my delight it was delicious, and a perfect blend of healthy and flavor.
This tuna salad needed to be both tasty, as well as a healthy meal. I started by adding a variety of wonderful ingredients, tossed in a Mexican flair, and served it on a bed of lettuce, with toasted corn tortillas.

Mexican Tuna Salad
Ingredients:
1 can (5 ounces) white Tuna in water, drained and flaked
1/4 cup plain, non-fat Greek yogurt
1 tablespoon olive oil
1/2 avocado, chopped
1/4 cup scallions, chopped, just the white part
1/4 cup celery, chopped
1 tablespoon sweet chili powder
1 cup lettuce, chopped
1/4 cup cherry tomatoes, chopped
4 toasted small corn tortillas

Directions:
Combine tuna, yogurt, and olive oil in a medium bowl.
Add next four ingredients, combining gently. Chill to let the flavors blend for 1 hour.
Lightly toast the corn tortillas.
Place tortillas on a plate, top with lettuce, tomatoes, and then tuna salad in the center. Serves two.
